כשהופכו למלוח גם על הצד השני, אבל הדק מתפזר על הבשר ונדבק בו וגם פועל יותר להוציא דם (רא"ש1). ומכל מקום קבלו האחרונים שמלח שאינו גס ממלח שעושין ממי הים (שהוא פירוש מלחא גללניתא דלקמן ס"ז2) אין צריך להדקו (איסור והיתר הארוך3, דרכי משה4):
