(כו) הדבוק בה.

אפילו רוצה לאכלה צלי נוהגין לשפוך מים על הכבד, והיכא דנהוג נהוג, ובמקום שאין מנהג אין להחמיר אלא אם כן רוצה לבשלה, דעיקר הטעם משום מלח הנדבק בו1, וכשאוכלים בעין אין אוכלים אותו מלח המובלע בדם (מנחת יעקב2):
