מפני שאין אנו בקיאין בחליטה ברותחים1, בשיעור הרתיחה ובשיעור זמן הרתיחה וכמה ישהה הבשר שם, וכן בחומץ, בשיעור החומץ אם מעט ואם הרבה ושיעור זמן שיניחוהו בחומץ ואם יהי' החומץ חם על ידי האש או קר וכיוצא בזה מן הספיקות (ב"ח2):
